On a hot summer day, nothing beats soft serve. Even the hottest days can be made a little more bearable by snacking on something cool. Instead of going to an ice cream store, make this vegan soft serve developed by recipe developer and wellness campaigner Halie Thomas on the latest episode of the Well+Good YouTube channel’s Alt-Baking Bootcamp. It’s a deliciously refreshing treat that combines creamy coconut with juicy cherries.

Thomas, the author of Living Lively: 80 Plant-Based Recipes to Activate Your Power and Feed Your Potential ($12), says, “It’s a super straightforward dish.” “All you need is a blender and a few extremely creamy frozen ingredients.”

The process for making soft serve begins the night before. Freeze the banana pieces in a bag and the full-fat coconut milk in an ice cube tray, according to Thomas. Remove the pit and place the cherries in the freezer as well if using fresh cherries. You can also buy frozen cherries that have already had the pit removed. Cherries are the star of this dish, and they’re high in fibre and antioxidants that can help with anything from muscle recovery after exercise to melatonin production.

In a blender, combine the frozen ingredients. After that, you can add cashew butter, coconut butter, and/or ground cardamom to enhance the flavour. “I love using nut butters in this soft serve because it just adds this toasted flavour that I really enjoy,” Thomas explains. “I also have coconut butter here, which is optional, but because coconut butter is simply pureed coconut meat, you get a pretty full-bodied coconut feel with it. I also have some cardamom, which you may leave out if you choose, but I enjoy adding spice to my recipes.”

Blend in the oat milk and maple syrup until the mixture reaches a smooth and creamy consistency. Place your soft serve in a bowl and garnish with fresh chopped cherries and coconut flakes. Recipe for Nutty Cherry Coconut Soft Serve

For the soft serve, you’ll need the following ingredients:
1 full-fat coconut milk can (13.5 oz.)
1/4 cup oat milk, unsweetened
2 tblsp maple syrup (pure)
1 banana, medium/large
1 cup cherries, frozen (about 20)
1 tablespoon cashew butter (or your favourite nut/seed butter)
1 tablespoon butter made from coconut
1/4 teaspoon cardamom powder, or to taste

1. Pour the canned coconut milk into 12 wells of an ice cube tray the night before you want to prepare the soft serve. Place one banana in a bag and cut it into six bits. Overnight, put the milk and banana in the freezer.

2. 5–10 minutes before making the soft serve, take the cubes out of the freezer.

3. Combine the coconut milk cubes, oat milk, maple syrup, banana, cherries, cashew butter, coconut butter, and cardamom in a high-powered blender or food processor. Blend until the mixture is thick and smooth.

4. Distribute the soft serve among the serving bowls. Serve with fresh cherries and coconut flakes on top.
