1. To make tomato jam, start by making the paste. Stirring gently over low to medium heat, heat the olive oil and salt together until the onions are very soft. The chilies should be added first and cooked for 10 minutes. Cook for another five minutes after adding ginger. Cook for 1 minute after adding cumin and cayenne. Cook for three minutes after adding tomato paste. About five minutes later, deglaze with vinegar. Continue to stir occasionally, then add agave, tomato, and cook on low for 30 to 45 minutes.
